Prosecco Ice Cream

Ingredients:

  • 500 ml Prosecco
  • 350 ml water
  • 350 gr sugar
  • 50 gr velvet sugar
  • 1 egg white

How To Prepare

  • Add the sugar into a pot, pour the water and bring it to a simmer to make a simple syrup.
  • When all the sugar is melted, leave the syrup to cool down then add the Prosecco.
  • On bain-marie, mount the egg white with the velvet sugar until you obtain a firm mousse.
  • Pour the Prosecco syrup on the mousse as delicately as you can, stirring gently while pouring.
  • Ideally, put the mix in an ice cream maker. If you don’t have one, freeze the composition for at least 4 hours before serving.

Pair this ice cream with fruit jelly and serve it with a glass of sparkling Prosecco.

Fortified Muscat & Panettone Ice Cream

A perfect ice cream for a girl’s night in with your friends.

Ingredients:

  • 60 ml fortified Muscat wine
  • 200 ml whole milk
  • 50 ml fresh cream
  • 80 gr Panettone
  • 2 yolks
  • 60 gr sugar

For decoration

  • Panettone slices

How To Prepare

  • In the same pot, bring the milk and cream to a simmer then let them cool.
  • In a bowl, mix the sugar with the yolks until you obtain a homogenous cream.
  • Mix the yolks and sugar with the milk and cream, then add the fortified Muscat wine to the composition.
  • Cut the Panettone into small cubes and mix it with the wine, milk, and yolk composition, then pour everything into an ice cream maker until it reaches the right smoothness.
  • In the meantime, pass your rolling pin over the Panettone slices to flatten them, cut a few discs and bake them at medium power for a few minutes. Let them cool and sprinkle with velvet sugar.

How To Prepare

  • Cut the watermelon into slices and put it on a barbecue for a few minutes, so it can develop a few smoky notes.
  • Cut the smoked melon into cubes and mix it with a generous amount of chestnut honey, the pinch of salt and basil leaves.
  • Put everything into a blender, add the Pinot Grigio and blend well.
  • Pour the mixture into a pan and freeze it for at least 5 hours. Every 30-40 minutes remove the sorbet from the freezer and mix it, then put it back in.

  • 250 ml AOC red wine
  • 200 ml water
  • 20 gr granulated sugar
  • 1 small cinnamon stick
  • 5 lemons
  • 5 oranges
  • 5 yolks
  • 1 vanilla bean
  • 50 gr butter

How To Prepare

  • In a large saucepan, bring to a simmer 20 gr of sugar with the water and form a syrup.
  • Add the wine, cinnamon, lemon and orange zest, and the vanilla seeds and let the syrup simmer for another 10 minutes. Cool.
  • Mount the yolks with 100 gr of sugar until the mixture is homogenous, then slowly incorporate the wine mixture.
  • Melt the butter on bain-marie and add it to the mixture.

How To Prepare

  • In a pot, pour the milk, half of the vanilla extract and the Amaretti biscuits and bring everything to a simmer.
  • Mount the yolks with 70 gr of sugar and cocoa. Pour the warm milk over the yolks, put the pan on the hob and cook until the mixture becomes soft and glossy.
  • Filter the mixture, add the cream and pour the mixture into the ice cream maker.
  • Cut the plums in half and peel them, then cook them with the red wine and 40 gr of sugar for 10 minutes.

Serve the wine plums with the ice cream in a large plate.

  • 400 ml Malbec Reserve wine
  • 160 gr 90% dark chocolate
  • 300 ml double cream
  • Half can condensed milk

How To Prepare

  • In a pot, reduce the Malbec until there are approximately 8 tablespoons left and let it cool.
  • Melt the chocolate in another pot, stirring it continuously.
  • In a bowl, mount the double cream with the condensed milk until firm, then pour the melted chocolate and reduced wine to the mixture. Mix until homogenous.
  • Pour the mixture into a pan and freeze for at least 6 hours.

Serve the ice cream in large wine glasses and pair it with chocolate pralines.

  • 750 ml Cabernet wine

  • Pour the syrup and the fruit into a blender and mix until smooth. Strain the mixture and pour it into a pan.

Ingredients For The Ice Cream:

  • 250 ml fresh cream
  • 150 gr grated Parmigiano Reggiano 24 months cheese

Ingredients For The Pear And Wine Reduction:

  • 1 large pear
  • 2 teaspoons of fructose
  • 250 ml red wine, ideally AOC Chianti wine

Ingredients For The Crispy Wafers:

  • 50 gr of grated Parmigiano Reggiano 24 months cheese

How To Prepare

  • In a pan, warm the cream without boiling it, take it off the hob and add the grated Parmigiano Reggiano cheese.
  • Mix well with a whip until the cheese melted and the mixture is smooth.
  • Pour the mixture into a pan, refrigerate for 2 hours then freeze for another two hours.
  • Peel the pear and cut it into small cubes.
  • In a pan, pour the wine, add the fructose and cook on medium heat until the liquid is reduced to a half. Add the pears and cook for 15 more minutes. Cool.
  • With the 50 gr of grated cheese make crispy wafers by sprinkling round patches of cheese on a pan. Bake at medium heat until the cheese is melted, then cool.
